THE MASTER DISTILLER, DARRYL MCNALLY

Darryl had spent his whole working life in Irish whiskey and the Dublin Liberties Distillery was is chance to put his very own stamp on whiskey that he's been keen to make for years. He's a member of the Institute of Brewing and Distilling, and in 2010 was accorded the 'Worshipful Company of Distillers Award'. Darryl oversees all aspects of the whiskey making process, including the task of selecting an innovative and unique range of highest quality casks.

A whiskey born of a city like no other. The Dubliner is a smooth, tasty and versatile Irish whiskey from the Dublin Liberties Distillery, a working distillery located in the heart of D8, the original centre of distilling. Dublin is a city which stays with you. It's vibrant, warm and exciting - just like their whiskey. Opened in February 2019, the distillery is considered one of the leading players in reviving Dublin’s local whiskey production.

Dubliner Irish Whiskey is made for simply sipping, or as a must-have ingredient for the very best cocktails. Drink this versatile whiskey with ginger ale, sparkling water and lime, or on its own. It's ideal for creating classic cocktails, such as adding a dash of orange bitters and brown sugar for a famous Old Fashioned. It's also unbelievably tasty in a Whiskey Sour.

50ml Dubliner Bourbon Cask Irish Whiskey
25ml Lime Juice
15ml Demerara Sugar Syrup
1 Dash of Angostura Bitters
Sprig of Mint Leaves
Method
  • In a saucepan, combine 2 parts Demerara sugar with 1 part water. Heat over medium heat, stirring constantly until sugar dissolves. Cool before use.
  • Fill a cocktail shaker with ice.
  • Add 50ml Dubliner Bourbon Cask Irish Whiskey, 25ml lime juice, 15ml Demerara sugar syrup, and a dash of Angostura bitters to the shaker.
  • Shake well until thoroughly chilled.
  • Strain the mixture into a chilled glass filled with ice.
  • Garnish with a sprig of mint.

1 Dash of Angostura Bitters

Method
  • In a shaker, combine 35ml of Dubliner Bourbon Cask Irish Whiskey, the juice from 1 lime wedge, and a dash of Angostura Bitters.
  • Add ice, shake well for 10-15 seconds.
  • Strain into a glass.
  • Top with apple juice.
  • Garnish with a lime wedge.

10ml Dubliner Honeycomb Irish Whiskey Liqueur
20ml Sweet Vermouth
10ml Campari

Method
  • Combine all ingredients in a mixing glass with ice and stir until thoroughly chilled.
  • Strain the cocktail into a rocks glass over fresh ice.
  • Express the oil from a lemon zest over the drink for a burst of citrus aroma, then add the zest to the drink for an extra layer of flavour.
