20ml Hell or High Water Spiced Rum
20ml Pineapple Purée
20ml Fresh Lemon Juice
Ginger Beer or Ginger Ale
1 Pineapple Leaf
Method
  • In a cocktail shaker, combine all the ingredients except the ginger beer.
  • Shake well with ice.
  • Strain over ice and top up with ginger beer or ginger ale.
  • Garnish with a pineapple leaf.
